People don’t normally associate alcohol with sustainability. Sure, we’ve all seen organic wines, but they are often still going through the same intricate global supply chains as many other consumer goods. However, as Mackenzie Chung Fegan points out in Bon Appétit, many alcohol producers are making the steps they can to produce products that are easier on the planet. For us, one of the great beauties of local ciders, wines and apéritifs is they don’t require the large amount of water and energy used in industrialized hard liquor distillation. Or the considerable transport milage and complex supply chain of mass market beer.
So, we can create products that have a comparatively tiny carbon footprint. On top of that - because we opt for biodiverse orchards with rich ecosystems, and we pick and press the apples ourselves - we’re able to create something that’s about as sustainable as any beverage alcohol could be. It’s honestly not that far off having a few apple trees in your garden and making a few bottles a year yourself as a hobby. We have a bit more extensive setup here at our cidery to handle hundreds of apple bins, but we’ve still modeled the way we do things after the simplicity of Old World, small-batch cider. Every step is done by us, in the simplest way, with the lowest impact possible.
