Delicately complex, this cider blends Cortland and Golden Russet apples grown at two spray-free orchards at the base of the North Mountain, Annapolis Valley.
Pressed in the autumn of 2022, the two tanks were blended and bottled in February 2023. A small amount of residual sugar remained, resulting in the "méthode ancestrale" or "pétillant naturel" style of bottle-conditioned cider. A small amount of sediment naturally forms during this process. We recommend gently agitating the bottles to reincorporate the contents, or storing upright and pouring off, as suits your preference.
Bottled in clear 500mL glass highlights the honeyed straw colour and we suggest storing it out of direct sunlight.
